The unit consists mainly of a reactor in which glucose is isomerized into fructose by means of glucose isomerase, an enzymatic catalyst. The unit enables to study the kinetics of enzymatic reactions and the effects of the operating conditions. A polarimeter measures the angle of rotation of the solution from which the conversion of the reaction can be estimated. An optional data acquisition software with interface is also available.
